1 TL Backpulver
eine Prise Salz
etwas Zimt
1 Ei
1/2 Häferl Spitz Eierweinbrand
1/2 Häferl Milch
2 EL Öl

Einfach die Zutaten zu einem Teig verrühren und rausbraten.

Spiegelei-Toast

Zutaten für 4 Personen:

8 Scheiben Toastbrot
8 Eier
100 g Butter
200 g Gouda
geriebenen Schnittlauch zum Bestreuen
Salz, Pfeffer

Zubereitung Spiegelei-Toast:

Das Innere der Toastscheiben mit einem Teelöffel eindrücken, dabei einen 1-cm-dicken Rand aussparen.


Ei in die Mulde schlagen und mit Salz und Pfeffer würzen.


Nun den Toastrand mit Butter bestreichen.


Butterrand großzügig mit Käse bestreuen und nochmal mit Salz und Pfeffer würzen.


Für ca. 10 Minuten bei 200 °C (Ober- und Unterhitze) im Ofen backen. Mit frischem Schnittlauch bestreuen und warm genießen.

Sonntagsbrötchen mit Speck

Rezept von Hütthalers Hofkultur, zum leckeren Onlineshop geht es hier.


Zuerst werden normale Sonntagsbrötchen vierteilt und umwickelst dann jedes einzeln mit Speck. Danach pinselst du eine Ofenform mit Butter aus und legst die umwickelten Brötchen hinein. Dann bäckst du sie bei 180° C Heißluft für 20 Minuten.

Währenddessen kannst du den Dip vorbereiten:

1/2 Becher Sauerrahm, 250g Naturjoghurt und dann ein bisschen geriebenen Cheddar vermengen mit Salz und Pfeffer würzen und die letzten 5 Minuten im Ofen mitbacken. Mhhhm!! :)

Blaubeer-Orange Marmelade

Zutaten

500 g Heidelbeeren (Blaubeeren),
2  Dr. Oetker Finesse Natürliches Orangenschalen Aroma
250 g Gelierzucker 2:1
1 TL Zitronensäure

Zubereitung

Die Heidelbeeren, waschen, gut abtropfen lassen und pürieren. Mit dem Gelierzucker und Dr. Oetker Finesse in einem hohen Topf vermischen.

Aufkochen und mindestens 3 Minuten unter Rühren sprudelnd kochen lassen.

Die Marmelade sofort in Twist-Off-Gläser füllen, fest verschließen und für 5 Minuten auf den Deckel stellen.

Aprikosen(Marillen)-Lavendel-Marmelade

Zutaten für ca. 4 Gläser à 250 ml

900 g reife Aprikosen (Marillen) (entsteint gewogen)
3 getrocknete Lavendelblüten
100 g Honig
400 g Gelierzucker (3:1)

1. Die Aprikosen waschen, in einem Sieb abtropfen lassen. Die Aprikosenhaut abziehen, die Früchte halbieren, entsteinen und in Stücke schneiden.

2. Die Lavendelblüten klein hacken. Alle Zutaten in einen großen Topf geben und abgedeckt, am besten über Nacht, ziehen lassen.

3. Den Topf auf die Herdplatte setzen, die Masse aufkochen und 3 Minuten unter Rühren sprudelnd kochen lassen. Den aufsteigenden Schaum mit einer Schöpfkelle abschöpfen.

4. Den Topf von der Herdplatte ziehen und die Marmelade nach der Gelierprobe zügig in die heiß ausgespülten Gläser füllen. Diese sofort verschließen und 5 Minuten auf den Kopf stellen.

Bannock


Ingredients: (for 16 flatbreads)

1 kg of flour
2 tbsp baking powder
2 tsp salt
½ l water

For a slightly smaller amount of flatbread the following quantities are recommended:

2 coffee cups flour or Schaer Bread Mix B (glutenfree)
2 tsp baking powder
½ tsp salt
½ - 1 coffee cup drinking water

The stated amount is enough for a few meals flatbread.

Preparation: (10-20 minutes)

Knead all ingredients to a dough and form about finger-thick flatbreads. Put some fat in a frying pan and bake each side for a few minutes until they are crunchy.

Combine 3-4 cups of whole grain flour, a pinch of salt, and 2-3 tablespoons of any kind of oil or animal fat with enough warm water to turn your ingredients into a semi dry dough. Careful not to add to much water! If you add too much water add flour to compensate. Use your hands to kneed the dough, keep mixing until it has a thick and even consistency. Then give the bannock a quick coating of oil or fat and then its ready to cook.

All you need is a fire, your bannock dough and a live green tree branch about 1/2 inch (1,3 cm) in diameter.

What you want to do is roll your dough into a 1/2 inch (1,3 cm) thick snake then wrap the dough around the stick and cook it evenly over the fire until it is fully cooked. It's as simple as that!

If you don't have the tools you need to make a fire you can try leaving your dough on a rock under the heat of the afternoon sun. You may just be happily surprised by the results!

Tips / Notes:
  • Bannocks can vary, for example with whole wheat flour, grits, oatmeal, milk powder, peanuts, berries and barley flour (then it's called Balep korkun)
  • It's best to eat a Bannock when freshly made, when still warm and toasted.
  • You can eat the Bannocks with jam, but they also taste delicious with melted cheese.
  • The recommended consumption is within 24 hours.

Bannock ist ein Fladenbrot, das seine Ursprünge in den schottischen Highlands hat. Im 18. und 19. Jahrhundert fand es auch bei den Ureinwohnern im Osten Kanadas Verbreitung.

Zutaten: (für 16 Fladenbrote)

1 kg Mehl
2 EL Backpulver
2 TL Salz
½ l Wasser

Für eine etwas kleinere Menge Fladenbrot empfehlen sich folgende Mengen:

2 Kaffeetassen Mehl oder Schär Brot Mix B (glutenfrei)
2 TL od. 1 Pkg. Backpulver
½ TL od. 1-2 Prisen Salz
½ - 1 Kaffeetasse Trinkwasser

Die angegebene Menge reicht für ein paar Mahlzeiten Fladenbrot.

Zubereitung: (10-20 Minuten)

Aus allen Zutaten einen Teig kneten und etwa fingerdicke Fladen formen. In einer Pfanne ein paar Minuten pro Seite mit etwas Fett (wenn die Pfanne nicht beschichtet ist) backen, bis es schön knusprig ist.

Tipps/Anmerkungen:
  • Man sollte während des gesamten Backens darauf achten, dass das Brot goldbraun gebacken und nicht zu dunkel wird. Man sollte gegebenenfalls die Hitze etwas runterregulieren, um das Bannock möglichst gleichmäßig durch zu backen.
  • Man kann Bannock vielfältig variieren, z. B. mit Vollkornmehl, Schrot, Haferflocken, Milchpulver, Erdnüssen, Beeren oder Gerste (dann heißt es Balep korkun).
  • Am besten isst man Bannock in frischem Zustand, wenn es noch warm bzw. getoastet ist.
  • Bannocks schmecken mit Marmelade aber auch (in der Pfanne) mit Käse überbacken vorzüglich.
  • Verzehr innerhalb von 24 Stunden empfohlen

Blaubeer-Thymian Marmelade

Zutaten

500 g Heidelbeeren, (Blaubeeren)
2 EL Thymian, (Blätter)
2 EL Zitronensaft
1 TL Zitronensäure
300 g Gelierzucker, 2:1

Zubereitung

Die Heidelbeeren verlesen, waschen und gut abtropfen lassen. Mit dem Gelierzucker in einem hohen Topf mischen.

Thymianblättchen und Zitronensaft zufügen und aufkochen. Mindestens 3 Minuten unter Rühren sprudelnd kochen lassen.

Die Marmelade sofort in Twist-Off-Gläser füllen, fest verschließen und auf den Deckel stellen.

Kommentar

Die hält mindestens ein Jahr. Bei mir steht die im Vorratsregal.

Scones

Ingredients

270 g (10 oz) Schär "Mix Pâtisserie" Mix C
100 g (3.5 oz) soft butter
100 ml milk
60 g (2 oz) sugar
1 egg
2 teaspoons baking powder
a pinch of salt.

Method

Put flour and baking powder into a bowl. Stir butter, salt and egg with together the milk, and add to the flour. Mix with a ladle until you have a smooth dough. Leave to rest for 20 minutes. Roll the dough until it is approx. 1 – ½ cm thick. Cut out round discs of about 5 cm in diameter. Lay out on a baking tray that is covered with baking paper. Bake in a preheated oven for 15 min. at 180° C (350° F).

Tip:

The scones taste best with lukewarm butter and jam.

Zutaten

270 g "Kuchen und Kekse" Mix C Schär
100 g weiche Butter
100 ml Milch
60 g Zucker
1 Ei
2 TL Backpulver
eine Prise Salz

Zubereitung

Das Mehl mit dem Backpulver in eine Schüssel geben. Butter, Zucker, Salz, und Ei mit der Milch verrühren und zu dem Mehl geben. Mit einem Kochlöffel zu einem geschmeidigen Teig verrühren. 20 Min. ruhen lassen. Den Teig ca. 1- 1/2 cm dick ausrollen. Rondelle mit 5 cm Durchmesser ausstechen. Auf ein mit Backpapier ausgelegtes Blech legen. Im vorgeheizten Backofen bei 180° ca. 15 Min. backen.

Tipp:

Die Scones schmecken am Besten lauwarm mit Butter und Marmelade.

Potato bread / Kartoffelbrot


 60 min.250 min at 180°C - 220°C (350°F, Gas Mark 4 - 7)

Ingredients

500 gr. (1 lb. 2 oz.) Schär "Bread Mix" Mix B (gluten-free bread mix)
250 gr. (9 oz.) boiled, peeled, and puréed potatoes
50 gr. (2 oz.) margarine (or 15 ml. / 1 1/2 tablespoons oil)
1 egg
10 gr. (1 tablespoon) dried yeast or 15 gr. (1 1/2 tablespoons) fresh yeast
300 ml. (1 1/4 cups) lukewarm water.

Method

If fresh yeast is used, dissolve the yeast in some water, put the flour in a mixing bowl, and add the dissolved yeast and the rest of the water, add in the potatoes, the margarine, and the egg, and work all of the ingredients into a smooth dough. If dried yeast is used, mix it well with the flour, add all of the other ingredients, and then work everything into a smooth dough. Put the dough in a greased bread tin that has been coated with flour and leave to rise in a warm place (30° C. / 86° F.) for about half an hour. The dough should have approximately doubled in volume. Put the bread in a preheated oven and bake at 180°C. (350°F, Gas Mark 4) for env. 40 minutes, than bake for another 10 minutes at 220°C (425°F, Gas mark 7).


Zutaten

500 g Schär „Brot-Mix“ Mix B
10 g Trockenhefe oder 15 g Frischhefe
250 g gekochte und durch die Kartoffelpresse gedrückte Kartoffeln
50 g Margarine
450 ml lauwarmes Wasser

Zubereitung

Mehl und Hefe in einer Rührschüssel vermischen (siehe Kastenbrotrezepts). Das Mehl mit den anderen Zutaten zu einem glatten und gleichmäßigen Teig verarbeiten. Anschließend den Teig in eine mit Butter gefettete und bemehlte Kastenform geben, mit einem feuchten Tuch abdecken und an einem warmen Ort ca. 30 Minuten gehen lassen. Etwa 40 Minuten im vorgeheizten Backofen bei 180°C backen, dann die Temperatur auf 220°C erhöhen und weitere 10 Minuten backen (damit die Kruste knusprig wird).

Oscar's Tipp: Dieser Teig kann auch als Pizzateig verwendet werden. Hierzu den Teig auf einem Backblech ausrollen und belegen. Einfach köstlich!

Gluten-Free Lemon Pancakes

Celebrate summer any time of the year: lemon and cornmeal give these pancakes a bright citrus flavor that tastes great with blueberries, raspberry jam, maple syrup, or simple butter and honey.

  • 1/2 cup (2 5/8 ounces) potato starch 
  • 3/4 cup (3 5/8 ounces) cornmeal (whole-grain preferred)
  • 3 tablespoons (1 ¼ ounces) sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/8 teaspoon xanthan gum 
  • 2 large eggs
  • 3 tablespoons (1 ½ ounces) melted butter or vegetable oil
  • 3/4 to 1 cup (6 to 8 ounces) milk
  • 2 tablespoons grated lemon rind or ½ teaspoon lemon oil

Directions:

1) Whisk together the first six ingredients and set aside.

2) Beat together the eggs, melted butter or oil, milk, and lemon. Whisk into the dry ingredients. The batter should be thinner than regular pancake batter; if it's not, stir in an additional 1 to 2 tablespoons of milk, or enough to thin the batter.

3) Preheat your griddle to medium-high; if you have an electric griddle, set it to 350°F. Grease the griddle.

4) Pour about 2 tablespoons batter at a time onto the griddle. Cook the pancakes for 1 to 2 minutes, until their tops are bubbly, their edges look dry, and their bottoms are golden brown.

5) Turn over and cook for an additional 1 to 2 minutes. Serve hot, with butter and syrup.

Yield: 18 medium pancakes (3" to 4").

Haleem

Haleem (Persian: حلیم ) is a thick Persian high calorie dish. It is a special dish prepared during Ramadan in Iran since its good for the stomach.
In Iran, Haleem is made of wheat and Turkey. This dish is slow cooked for some hours which results in a paste like consistency, with the taste of turkey blending with wheat.

Ingredients: (4 servings)
1 l water
1 pound (1/2 kg) skinless turkey breast (You may substitute as much chicken or meat)
1 large sliced onion
1/2 (227 g) pound wheat seeds or Bulgur (pre-shelled, white wheat)
Sesame
Sugar (optional)
Butter or Ghee (optional)
Cinnamon

Place turkey, onion and salt in a pot. Lower heat and cook until turkey is done (about 1 hour). If juices evaporate before turkey is done, add 1/4 cup water. When turkey is cooked, remove from the pot and mash with a potato masher.

Add water to the bulgur to barely cover it (1 litr is enough), then bring to a boil.

Stir occasionally, to prevent the formation of a crust on the bottom of the pan.

In a food processor, mash bulgur into a soft paste and set aside.

Return turkey and bulgur to the pot, mix well and cook over low heat for 2 hours. Then add butter, sugar and sesame.

Serve it in a bowl, sprinkle with cinnamon.

Buttermilk Pancakes


Ingredients:
25 g butter
2 eggs
200 ml buttermilk
4 table spoons sugar
150 g flower
Salt
1 teaspoon baking powder
(about 12 pancakes)

Melt the butter. Whisk the eggs with the buttermilk and the sugar and then stir in the butter. Blend the flower with the salt and the baking powder and stir it in the egg-buttermilk-mix. Let the batter rest for about 15 min.

Heat butter in a pan and poor two table spoons of the batter into the pan and bake the pancakes about 90-120 seconds per side at middle temperature. If things are at the right temperature, you'll know it is time to flip, without timing, by the small bubbles forming at the top of the pancake. When it is covered in small holes, the edge of the pancake will start to look dry. This is the time to flip.

Keep the pancakes warm in the oven at a temperature of about 60 °C.

Tip:
  • It is better to mix the dry ingredients under the wet, like this the pancakes will get more fluffy.
  • The pancakes also get more fluffy, if you let the batter rest 30 min.
  • Don't use an electronic mixer, due to the too vigorous stirring the baking powder looses its momentum, as the release of carbon dioxide is prevented.
  • Next to the baking powder I also use a pinch of baking soda and also a teaspoon vanilla sugar.
  • If you can, pull the egg/buttermilk out of the fridge a bit early and let it come to room temperature. It reacts more strongly to the baking soda and gives more rise to the pancake.
  • The perfect batter should pour onto the fry pan and not move much; it should only require a few taps of the measuring cup to spread it out. If the batter is too runny then just add a bit more flour, a few tablespoons at a time until it thickens up.
