Sonntagsbrötchen mit Speck
Rezept von Hütthalers Hofkultur, zum leckeren Onlineshop geht es hier.
Zuerst werden normale Sonntagsbrötchen vierteilt und umwickelst dann jedes einzeln mit Speck. Danach pinselst du eine Ofenform mit Butter aus und legst die umwickelten Brötchen hinein. Dann bäckst du sie bei 180° C Heißluft für 20 Minuten.

Währenddessen kannst du den Dip vorbereiten:
1/2 Becher Sauerrahm, 250g Naturjoghurt und dann ein bisschen geriebenen Cheddar vermengen mit Salz und Pfeffer würzen und die letzten 5 Minuten im Ofen mitbacken. Mhhhm!! :)

Zwiebel-Speckbrot

1 trockenen Germ
250 g Roggenmehl
150 g Weizenmehl
200 g Speckwürfel
1 große Zwiebel
Kräuter nach Belieben
400 ml lauwarmes Wasser
1 Prise Salz
1 Prise Zucker.
Zuerst schneidest du die Zwiebeln und schwitzt sie glasig an, mischst dann den Speck und die Kräuter dazu und lässt das Ganze ca. 3 Minuten anrösten, dann abkühlen lassen.

Dann den Germ in 2-4 El lauwarmen Wasser auflösen. Beide Mehlsorten, Salz und Zucker mit dem Knethaken zu einem Teig verarbeiten. Teig ca 30 Minuten ruhen lassen und dann nochmals aufschlagen.
Speck-Zwiebel-Kräutermasse hinzufügen und unter dem Teig unterrühren.
Dann eine Kastenform gut einfetten, Brotteig einfüllen und ab in den Ofen. Backofen auf 180 Grad, Ober-Unterhitze, und das Brot 1 Std. auf mittleren Schiene backen.

Bagels
True bagels are preboiled in slightly alkaline water giving them a distinct flavor. Their history can be traced to a seventeenth-century Viennese baker who made stirrup-shaped rolls to thank the Polish king for defeating the Turks besieging Vienna. The German word for stirrups is Bügel, which became bagel in Yiddish.
Ingredients:
1 cup water
1 package yeast
1 tablespoon sugar
2 teaspoons salt
1 tablespoon oil
1 egg white
1 pound bread flour
1 teaspoon baking soda
Flour for dusting
Method:
1. Warm water to about 90 degrees (32 C).
2. Add yeast, sugar, and 1 teaspoon salt. Let ferment at room temperature about 10 minutes.
3. Add oil and egg white, blend briefly with mixer at low speed.
4. Sift flour and gradually add to mixing bowl, blending ingredients at low speed.
5. Dough will be very stiff; a tablespoon of water may be added if necessary.
6. Knead dough briefly on flour-dusted work surface, cover with kitchen towel, and let rise for 40 minutes.
7. Divide dough into 16 to 20 small balls, each rolled tightly. Shape balls into strands about 7 inches (17,8 cm) long.
8. Shape strands into rings, sealing ends with water.
9. Let rings rise for 20 minutes.
10. Fill saucepan three-quarters full with water; add remaining salt and baking soda.
11. Bring to a boil. Carefully add bagels and poach for 5 minutes.
12. Lift with skimmer onto baking sheet.
13. Bake at 375 degrees (190 C) for 20 minutes.
Yield: 16 to 20, depending on size
Equipment needed: Electric mixer with dough hook, small bowl, flour sifter, work surface, 3-quart wide saucepan, skimmer, baking sheet.

Maisbrot
Ergibt 12 - 16 Stück.
Zutaten
1 Ei
250 ml Buttermilch
50 g Butter, geschmolzen
1/2 Teelöffel Salz
2 EL Zucker
je 1 gestr. Teelöffel Backpulver und Natron
120 g feines gelbes Maismehl (Polenta)
150 g Mehl
Zubereitung
Ei in einer Schüssel verschlagen, Buttermilch und Butter dazugeben und gut rühren. In einer anderen Schüssel die trockenen Zutaten vermischen, die Flüssigkeit dazugeben und kurz zu einem glatten Teig rühren. In einer Kuchenform (rund etwa 18 bis 20 cm, eckig 20 bis 23 cm) etwa 25 Minuten bei 200 Grad backen. Etwas abkühlen lassen und in Quadrate schneiden.
Einfache Variationen für das Maisbrot: Für Blueberry Cornbread 1 EL Zucker mehr zum Teig geben und 100 g TK-Blaubeeren untermischen. Für Mexican Cornbread 1/2 Dose Mais, 75 g geriebenen Käse und 1 gehackte Frühlingszwiebel unterrühren.

Bannock
Ingredients: (for 16 flatbreads)
1 kg of flour
2 tbsp baking powder
2 tsp salt
½ l water
For a slightly smaller amount of flatbread the following quantities are recommended:
2 coffee cups flour or Schaer Bread Mix B (glutenfree)
2 tsp baking powder
½ tsp salt
½ - 1 coffee cup drinking water
The stated amount is enough for a few meals flatbread.
Preparation: (10-20 minutes)
Knead all ingredients to a dough and form about finger-thick flatbreads. Put some fat in a frying pan and bake each side for a few minutes until they are crunchy.

Combine 3-4 cups of whole grain flour, a pinch of salt, and 2-3 tablespoons of any kind of oil or animal fat with enough warm water to turn your ingredients into a semi dry dough. Careful not to add to much water! If you add too much water add flour to compensate. Use your hands to kneed the dough, keep mixing until it has a thick and even consistency. Then give the bannock a quick coating of oil or fat and then its ready to cook.
All you need is a fire, your bannock dough and a live green tree branch about 1/2 inch (1,3 cm) in diameter.
What you want to do is roll your dough into a 1/2 inch (1,3 cm) thick snake then wrap the dough around the stick and cook it evenly over the fire until it is fully cooked. It's as simple as that!
If you don't have the tools you need to make a fire you can try leaving your dough on a rock under the heat of the afternoon sun. You may just be happily surprised by the results!

- It's best to eat a Bannock when freshly made, when still warm and toasted.
- You can eat the Bannocks with jam, but they also taste delicious with melted cheese.
- The recommended consumption is within 24 hours.

Zutaten: (für 16 Fladenbrote)
1 kg Mehl
2 EL Backpulver
2 TL Salz
½ l Wasser
Für eine etwas kleinere Menge Fladenbrot empfehlen sich folgende Mengen:
2 Kaffeetassen Mehl oder Schär Brot Mix B (glutenfrei)
2 TL od. 1 Pkg. Backpulver
½ TL od. 1-2 Prisen Salz
½ - 1 Kaffeetasse Trinkwasser
Die angegebene Menge reicht für ein paar Mahlzeiten Fladenbrot.
Zubereitung: (10-20 Minuten)
Aus allen Zutaten einen Teig kneten und etwa fingerdicke Fladen formen. In einer Pfanne ein paar Minuten pro Seite mit etwas Fett (wenn die Pfanne nicht beschichtet ist) backen, bis es schön knusprig ist.
Tipps/Anmerkungen:
- Man sollte während des gesamten Backens darauf achten, dass das Brot goldbraun gebacken und nicht zu dunkel wird. Man sollte gegebenenfalls die Hitze etwas runterregulieren, um das Bannock möglichst gleichmäßig durch zu backen.
- Man kann Bannock vielfältig variieren, z. B. mit Vollkornmehl, Schrot, Haferflocken, Milchpulver, Erdnüssen, Beeren oder Gerste (dann heißt es Balep korkun).
- Am besten isst man Bannock in frischem Zustand, wenn es noch warm bzw. getoastet ist.
- Bannocks schmecken mit Marmelade aber auch (in der Pfanne) mit Käse überbacken vorzüglich.
- Verzehr innerhalb von 24 Stunden empfohlen

Indian naan bread / Indisches Naan Brot 1

Ingredients
300 g Schär Bread mix – Mix B
140 ml lukewarm milk
3 level tsps dried yeast or 20 g fresh yeast
½ tsp sugar
½ tsp salt
140 g yogurt at room temperature
1 egg
Method
Mix the flour with the salt in a mixing bowl. Form a well in the middle. Add the yeast and the sugar. Pour in half the lukewarm milk. Wait about ten minutes until bubbles have formed. Mix together the remaining milk, yoghurt and egg and then knead with the prepared flour mix to make a supple dough. Cover the dough with a cloth and leave in a warm place for 30 minutes. Use moist hands to shape the dough into balls (without pressure) and then press each one into a round flatbread. Place a non-stick frying pan on the heat. Add the flatbreads and fry both sides at a high temperature. Take care as they can easily burn.
Zutaten
300 g Schär Brot Mix – Mix B
140 ml lauwarme Milch
3 gestrichene TL Trockenhefe od. 20 g Frischhefe
1/2 TL Zucker
1/2 TL Salz
140 g zimmerwarmes Joghurt
1 Ei
Zubereitung
Das Mehl mit dem Salz mischen und in eine Rührschüssel geben. In der Mitte eine Vertiefung bilden. Die Hefe und den Zucker hineingeben. Die Hälfte der lauwarmen Milch dazu schütten. Etwa 10 Minuten warten, bis sich Blasen gebildet haben. Die restliche Milch mit Joghurt und Ei verquirlen und mit dem vorbereiteten Mehlgemisch zu einem geschmeidigen Teig verkneten. Den Teig mit einem Tuch abdecken und an einem warmen Ort 30 Minuten gehen lassen. Aus dem Teig mit feuchten Händen ohne Druck Kugeln formen und diese jeweils zu runden Fladen ausrollen. Eine beschichtete Pfanne erhitzen. Die Fladen hinein geben und von beiden Seiten bei großer Hitze anbraten. Vorsicht, denn die Fladen können leicht anbrennen.

Potato bread / Kartoffelbrot

Ingredients
500 gr. (1 lb. 2 oz.) Schär "Bread Mix" Mix B (gluten-free bread mix)
250 gr. (9 oz.) boiled, peeled, and puréed potatoes
50 gr. (2 oz.) margarine (or 15 ml. / 1 1/2 tablespoons oil)
1 egg
10 gr. (1 tablespoon) dried yeast or 15 gr. (1 1/2 tablespoons) fresh yeast
300 ml. (1 1/4 cups) lukewarm water.
Method
If fresh yeast is used, dissolve the yeast in some water, put the flour in a mixing bowl, and add the dissolved yeast and the rest of the water, add in the potatoes, the margarine, and the egg, and work all of the ingredients into a smooth dough. If dried yeast is used, mix it well with the flour, add all of the other ingredients, and then work everything into a smooth dough. Put the dough in a greased bread tin that has been coated with flour and leave to rise in a warm place (30° C. / 86° F.) for about half an hour. The dough should have approximately doubled in volume. Put the bread in a preheated oven and bake at 180°C. (350°F, Gas Mark 4) for env. 40 minutes, than bake for another 10 minutes at 220°C (425°F, Gas mark 7).
Zutaten

10 g Trockenhefe oder 15 g Frischhefe
250 g gekochte und durch die Kartoffelpresse gedrückte Kartoffeln
50 g Margarine
450 ml lauwarmes Wasser
Zubereitung
Mehl und Hefe in einer Rührschüssel vermischen (siehe Kastenbrotrezepts). Das Mehl mit den anderen Zutaten zu einem glatten und gleichmäßigen Teig verarbeiten. Anschließend den Teig in eine mit Butter gefettete und bemehlte Kastenform geben, mit einem feuchten Tuch abdecken und an einem warmen Ort ca. 30 Minuten gehen lassen. Etwa 40 Minuten im vorgeheizten Backofen bei 180°C backen, dann die Temperatur auf 220°C erhöhen und weitere 10 Minuten backen (damit die Kruste knusprig wird).
Oscar's Tipp: Dieser Teig kann auch als Pizzateig verwendet werden. Hierzu den Teig auf einem Backblech ausrollen und belegen. Einfach köstlich!
