Strawberry-Banana Soy Smoothie

Ingredients

2 cups strawberries, fresh, stemmed and halved (about 10)
1 1/2 cups soy milk, vanilla, low-fat
1 1/2 tablespoons honey
1/2 teaspoon vanilla extract
1 medium banana, sliced
1 cup whipped dessert topping, fat-free, thawed (optional)
2 sprigs mint, fresh, (optional)

Preparation

1. Combine first 5 ingredients in a blender, and process until smooth. Top each serving with 1/2 cup whipped topping; garnish with mint sprig, if desired. Serve immediately.
